Description
Crispy and flavorful oven roasted baby potatoes tossed with garlic, Italian seasoning, and parmesan cheese. This simple side dish is perfect for any meal and ready in under an hour.
Ingredients
Potatoes
- 1 1/2 pounds baby potatoes, halved (any variety)
Seasoning
- 1/4 cup olive oil
- 2 teaspoons garlic, minced
- 1 1/2 teaspoons kosher salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried Italian seasoning
- 1/4 cup finely grated parmesan cheese
- 2 tablespoons chopped fresh parsley
- cooking spray
Instructions
- Preheat Oven: Preheat the oven to 400 degrees Fahrenheit. Line a sheet pan with foil and coat the foil with cooking spray to prevent sticking and make cleanup easier.
- Toss Potatoes: Place the halved baby potatoes in a large bowl. Add olive oil, minced garlic, kosher salt, black pepper, dried Italian seasoning, and grated parmesan cheese. Toss everything together thoroughly to ensure all potatoes are evenly coated with the flavorful mixture.
- Arrange and Bake: Spread the coated potatoes in a single layer on the prepared baking sheet. Bake in the preheated oven for 35 to 40 minutes or until the potatoes are golden brown on the outside and tender when pierced with a fork.
- Garnish and Serve: Once baked, remove the potatoes from the oven, sprinkle chopped fresh parsley on top, and serve immediately for the best flavor and texture.
Notes
- Using baby potatoes helps them cook evenly and quickly; if using larger potatoes, cut them into smaller, uniform pieces.
- Parmesan cheese adds a savory, nutty flavor, but you can omit it or substitute with a vegan cheese for a dairy-free version.
- Make sure to spread the potatoes in a single layer to ensure they roast evenly and become crispy.
- Fresh parsley adds a fresh, bright finish but can be substituted with other herbs like thyme or rosemary.
- Cooking spray on the foil prevents sticking and makes cleanup easier.
