Ingredients
Graham Cracker Crumble
- 5 graham crackers, finely crushed
- ⅓ cup all-purpose flour
- 1 teaspoon kosher salt
- ¼ cup plus 1 teaspoon granulated sugar, divided
- 6 tablespoons unsalted butter, melted
Peaches
- 2 ripe peaches, cut into ⅓-inch wedges
- 2 tablespoons light brown sugar
- 1 tablespoon fresh lemon juice
- 2 tablespoons unsalted butter (room temperature)
Raspberries & Whipped Cream
- 1 cup fresh raspberries
- 1 teaspoon granulated sugar
- 1 teaspoon fresh lemon juice
- 1 cup heavy cream
Instructions
- Prepare Graham Cracker Crumble: Preheat the oven to 325°F (160°C). In a food processor, pulse the graham cracker crumbs, all-purpose flour, kosher salt, and ¼ cup granulated sugar until finely ground. Transfer this mixture to a medium bowl, then add the melted butter. Mix until a few large clumps form. Spread the crumble evenly on a rimmed baking sheet and bake for 12–15 minutes, shaking the pan once midway, until golden and crisp. Remove and let it cool completely.
- Cook Peaches: While the crumble bakes, combine the peach wedges, light brown sugar, and 1 tablespoon fresh lemon juice in a medium bowl. Heat the remaining 2 tablespoons unsalted butter in a large skillet over medium heat. Add the peaches mixture and cook, tossing often, until the sugar dissolves and peaches soften, about 5 minutes. Remove from heat and allow to cool slightly.
- Prepare Raspberry Mixture: In a small bowl, mash the fresh raspberries with a spoon. Add the remaining 1 teaspoon granulated sugar and 1 teaspoon fresh lemon juice, mixing well. Let the mixture sit for 5 minutes to soften and release juices.
- Whip Cream: In a medium bowl, beat the heavy cream until medium-soft peaks form. This will take a few minutes using a hand mixer or whisk.
- Assemble Parfaits: Divide the warm cooked peaches among 4 serving bowls or glasses. Top each with a generous dollop of whipped cream, spoon over the mashed raspberries, and finish by sprinkling the cooled salted graham cracker crumble on top. Serve immediately for best texture contrast.
Notes
- For best flavor, use ripe, juicy peaches in season.
- Ensure the crumble is completely cooled before adding to maintain its crunch.
- Adjust sugar amounts slightly depending on the sweetness of your fruit.
- This parfait is best served shortly after assembly to enjoy the mixture of warm peaches and cool cream.
- To make ahead, prepare the crumble and peach mixture in advance and refrigerate; whip cream and assemble just before serving.
