A refreshing and naturally sweet Peach Sorbet made with frozen peaches, lemon juice, cinnamon, and optional maple syrup. This simple, no-cook dessert blends frozen fruit to create a smooth, creamy sorbet perfect for warm days or a light treat.

Instructions
- Prepare the peaches: Start by dicing your peaches. Slice them along the pit, then cut into rough dice pieces.
- Freeze the peaches: Spread the diced peaches evenly on a parchment-lined baking sheet and freeze them until firm, which will take at least 4 hours.
- Blend the sorbet: Place the frozen diced peaches along with lemon juice, Vietnamese cinnamon, and maple syrup into a food processor.
- Process until smooth: Blend the mixture until the fruit starts clumping together. Stop to break up chunks as necessary and continue processing until the sorbet is completely smooth, about 3-4 minutes.
- Serve or freeze: Serve the sorbet immediately for a soft texture, or freeze for 3-4 hours for a firmer consistency.
- Maintain smooth texture: If freezing longer, stir the sorbet every 30 minutes to prevent large ice crystals from forming and keep it smooth.
