- 3/4 Tbsp chia seeds

- 1 Tbsp maple syrup (or substitute with coconut sugar, organic brown sugar, or stevia to taste)
- 1/2 cup gluten-free rolled oats (best to use rolled oats vs. steel cut or quick cooking)

- Flaxseed meal or additional chia seeds
- Granola
Instructions
- Combine liquids and seeds: In a mason jar or small bowl with a lid, add the almond milk, chia seeds, peanut butter, and maple syrup. Stir gently to combine; the peanut butter doesn’t need to be fully mixed so you'll have creamy swirls in the final oats.
- Add oats and mix: Stir in the gluten-free rolled oats a few times, then press down with a spoon to ensure all oats are fully moistened and immersed in the almond milk mixture.
- Refrigerate overnight: Cover the jar or bowl securely with a lid or seal, then refrigerate for at least 6 hours or overnight to allow the oats and chia seeds to soak and soften.
- Serve and enjoy: The next day, open your oats and enjoy cold as is, or add your favorite toppings like fresh fruit, flaxseed meal, or granola. Optionally, you can warm the oats by microwaving for 45-60 seconds (ensure enough headspace to avoid overflow) or heating in a saucepan over medium heat, adding more liquid if needed.
- Storage: Keep any leftovers refrigerated and consume within 2-3 days for best freshness, ideally within 12-24 hours. Note this recipe is not freezer friendly.
