Description

Deliciously gooey and crunchy Peanut Butter Rice Krispie Treats topped with a smooth chocolate layer. These no-bake bars combine the classic marshmallow-cereal base with rich peanut butter and a luscious chocolate drizzle, perfect for snacks or dessert.

Ingredients

Main Ingredients

  • 1/4 cup unsalted butter
  • 1 (10 oz) bag mini marshmallows (about 5 cups)
  • 1/2 cup peanut butter
  • 6 cups Rice Krispie cereal

Topping

  • 8 oz chocolate chips (about 1 1/3 cups)
  • 2 teaspoons vegetable oil

Instructions

  1. Prepare Pan: Lightly grease a 9x13 inch pan with butter or non-stick cooking spray to prevent sticking.
  2. Melt Ingredients: In a large saucepan, melt the butter, mini marshmallows, and peanut butter together over low heat, stirring gently until smooth and combined.
  3. Add Cereal: Remove the saucepan from heat and stir in the Rice Krispie cereal until evenly coated with the marshmallow mixture.
  4. Press Mixture: Transfer the mixture into the prepared pan. Press down firmly using lightly sprayed hands with non-stick spray to avoid sticking, ensuring an even layer.
  5. Melt Chocolate: Place chocolate chips and vegetable oil in a medium heatproof bowl. Microwave at medium power for 45-second intervals, stirring after each, until the chocolate is almost melted. Continue stirring until smooth.
  6. Top Bars: Pour the melted chocolate over the pressed Rice Krispie mixture, spreading evenly to cover the surface.
  7. Set Bars: Allow the chocolate topping to harden at room temperature, which takes about 2 hours.
  8. Serve and Store: Cut into squares once set. Store in an airtight container at room temperature to maintain freshness.

Notes

  • Lightly spraying hands with non-stick spray helps prevent the sticky mixture from adhering to your fingers when pressing into the pan.
  • Microwaving chocolate at medium power prevents burning and helps to evenly melt the chocolate chips.
  • Pressing the mixture firmly into the pan ensures compact and sturdy bars.
  • For a nut-free version, substitute peanut butter with a seed butter like sunflower seed butter.
  • Store bars in an airtight container for up to 3-4 days at room temperature.
