Description

These Pecan Pie Bites are a delightful mini dessert featuring a buttery, creamy crust filled with a rich, sweet pecan filling. Perfectly portioned for bite-sized indulgence, they combine the classic flavors of pecan pie into easy-to-eat, crowd-pleasing treats baked until golden and set.

Ingredients

Crust Ingredients

  • 1/2 cup butter, softened (1 stick)
  • 3 ounces cream cheese, softened
  • 1 cup heaping all-purpose flour
  • 1/4 teaspoon salt

Filling Ingredients

  • 1 cup brown sugar, loosely filled
  • 1 large egg
  • 2 tablespoons butter, melted
  • 1/4 teaspoon vanilla extract
  • 3/4 cup pecans, chopped

Instructions

  1. Preheat Oven: Preheat your oven to 350°F to ensure it is ready for baking the pecan pie bites.
  2. Prepare Muffin Tin: Spray a 24-cup mini muffin tin thoroughly with cooking spray to prevent sticking.
  3. Make Crust Dough: Combine the softened butter, cream cheese, all-purpose flour, and salt. Mix with a fork or pulse in a food processor until the dough forms a cohesive ball.
  4. Form Crusts: Divide the dough evenly into 24 balls. Press each ball into the mini muffin cups, shaping to form a crust with enough depth to hold the filling.
  5. Prepare Filling: In a bowl, mix together the brown sugar, egg, melted butter, and vanilla extract until smooth. Fold in the chopped pecans evenly.
  6. Fill Crusts: Spoon or scoop the filling mixture into each crust, filling about three-quarters full to allow for bubbling.
  7. Bake: Place the muffin tin in the center of the preheated oven and bake for around 20 minutes until the filling is set and edges are golden.
  8. Cool: Allow the pecan pie bites to cool in the pan for a few minutes before gently removing them. Transfer to a wire rack to cool completely.
  9. Store: Store the bites in an airtight container for up to 3 days at room temperature. For longer storage, refrigerate or freeze.

Notes

  • Ensure the mini muffin tin is well greased to easily remove the bites.
  • The dough can be mixed by hand or in a food processor for convenience.
  • Filling each crust about 3/4 full prevents spills during baking.
  • Cool completely before storing to maintain texture and flavor.
  • These bite-sized treats are perfect for parties or as dessert snacks.
