Ingredients

Pineapple Mango Topping

  • 1 Can of Pineapple Rings or 1/2 of a fresh Pineapple cut into rings
  • 1 Mango, diced
  • 1 Bell Pepper, diced
  • 1/4 cup Red Onion, diced
  • 1/4 cup Cilantro, chopped
  • Juice of 1 lime
  • Salt, to taste

Crostini

  • 1 French Baguette, cut into 1/2 inch slices
  • 1/4 cup Olive Oil


Instructions

  1. Prepare the Pineapple: Grill the pineapple rings over medium-high heat for 2-3 minutes on each side to develop a smoky flavor, then allow them to cool. After cooling, chop the pineapple into small cubes. (Alternatively, you can skip grilling and use raw pineapple.)
  2. Mix the Topping: In a medium bowl, combine the grilled pineapple cubes, diced mango, diced bell pepper, diced red onion, chopped cilantro, and lime juice. Stir thoroughly to evenly incorporate all ingredients. Season with salt to taste.
  3. Rest the Topping: Let the mixture sit at room temperature for 15 minutes. This resting time allows the flavors to meld and the juices to mix, enhancing the overall taste.
  4. Prepare the Crostini: Preheat your oven to 400°F (204°C). Arrange the baguette slices on a baking sheet and brush the tops generously with olive oil.
