Potatoes

  • 2 large russet potatoes, peeled and rinsed

Oil for Frying

  • 2 quarts vegetable oil (or canola oil)

Cajun Seasoning

  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper


Instructions

  1. Prep Potatoes: Peel the russet potatoes and rinse them thoroughly. Then cut them into 1/2-inch thick sticks. Place the cut potatoes in cold water and soak for at least 1 hour or overnight to remove excess starch.
  2. Dry Potatoes: Drain the soaked potatoes and rinse again. Transfer them onto paper towels and pat dry carefully. Let them rest for 5 minutes to ensure they are dry before frying, which helps achieve crispiness.
  3. Mix Seasoning: In a small bowl, combine smoked paprika, garlic powder, dried oregano, kosher salt, and freshly ground black pepper to create the Cajun seasoning blend.
  4. First Fry: Heat the vegetable oil in a deep fryer or heavy-bottomed pot to 300ºF (149ºC). Fry the potato sticks in batches for 4-5 minutes until they are soft but not browned. Remove them from the oil and drain on paper towels.
  5. Second Fry: Increase the oil temperature to 400ºF (204ºC). Fry the potatoes again in batches for 2-3 minutes until they turn golden brown and crispy.
  6. Season: Immediately after frying, sprinkle the hot fries evenly with the prepared Cajun seasoning mix and toss to coat thoroughly. Serve hot for the best flavor and texture.
