These homemade protein bars are a nutritious and delicious snack perfect for on-the-go energy. Made with oats, peanut butter, banana, honey, flaxseed, and your choice of protein powder and mix-ins, they deliver a balanced mix of protein, fiber, and healthy fats. With simple ingredients and no baking required, these bars are easy to prepare and keep well refrigerated for up to two weeks.

- 1 1/2 cups old-fashioned rolled oats (135 g)
- 3/4 cup peanut butter or favorite nut butter or sunflower butter (180 g)
- 1 banana, mashed (120 g)
- 1/3 cup honey, agave, or real maple syrup (110 g)
- Pinch salt
- 1/2 cup ground flax seed (55 g)
- 1 cup protein powder (120 g)
- 2 teaspoons vanilla extract (10 ml)
Mix-Ins
- 3/4 cup chopped dates, dried fruit (blueberries, cranberries, or raisins), mini chocolate chips, unsweetened coconut flakes, nuts
Instructions
- Combine Ingredients: In a large bowl, mix all ingredients except the mix-ins until well combined. The mixture should be fairly soft and not dry or crumbly. If the mixture is too thick or dry, add a splash of water or milk, or an extra drizzle of honey to achieve the right consistency.
- Add Mix-ins: Gently fold in your chosen mix-ins, such as chopped dates, dried fruit, mini chocolate chips, unsweetened coconut flakes, or nuts, until they are evenly distributed throughout the batter.
- Press into Pan: Line an 8x8 inch pan with parchment paper. Press the mixture very firmly and evenly into the pan to ensure the bars will hold together well.
- Refrigerate: Place the pan in the refrigerator and chill for at least 1 hour to allow the bars to set properly.
- Cut and Store: Once set, cut into 16 bars. Store the bars in the refrigerator in an airtight container for up to 2 weeks to maintain freshness and texture.
