Instructions

- Mix Wet Ingredients: In a separate medium bowl, whisk the eggs until slightly frothy. Then mix in the oil, pumpkin puree, and vanilla extract until smooth and well combined.
- Combine Mixtures: Pour the wet ingredients into the bowl with the dry ingredients. Whisk gently but thoroughly until the batter is smooth and just combined without overmixing.
- Pour Batter and Bake: Divide the batter evenly between the two prepared bread pans. Place them in the oven and bake for 45 to 55 minutes, or until a toothpick inserted into the center comes out clean. Adjust timing slightly based on your oven; this recipe typically takes about 50 minutes.
- Cool the Bread: Let the breads cool in their pans for 10 to 15 minutes. Then transfer them to wire racks to cool completely before slicing to maintain perfect texture.
