Description

A cozy and delicious Pumpkin French Toast recipe perfect for fall mornings. This recipe features brioche slices soaked in a spiced pumpkin egg mixture, cooked to golden perfection, and topped with a homemade pumpkin butter for an extra indulgent touch.

Ingredients

French Toast Mixture

  • 4 large eggs, beaten
  • 3/4 cup milk
  • 1/2 cup pumpkin puree
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon pumpkin pie spice
  • Pinch of kosher salt
  • 1 loaf brioche, sliced into 1-inch thick slices
  • 3 tablespoons unsalted butter, divided

Pumpkin Butter Topping

  • 4 tablespoons unsalted butter, slightly softened
  • 2 tablespoons pumpkin puree
  • 2 tablespoons maple syrup
  • 1/4 teaspoon pumpkin pie spice
  • Pinch of kosher salt

For Serving

  • Maple syrup, for drizzling
  • Powdered sugar, for dusting

Instructions

  1. Prepare the French Toast Mixture: In a shallow baking dish, whisk together the eggs, milk, pumpkin puree, vanilla extract, pumpkin pie spice, and a pinch of kosher salt until well combined.
  2. Soak the Bread: Dip each brioche slice into the pumpkin mixture, letting it soak for about 30 seconds on each side so it absorbs the flavors thoroughly.
  3. Cook the French Toast: Heat 1 tablespoon of unsalted butter in a large nonstick skillet over medium-low heat. Cook two brioche slices at a time for 3 to 4 minutes per side, until they are golden brown and cooked through. Repeat until all slices are done, adding butter as needed.
  4. Make the Pumpkin Butter: In a medium bowl, whip the softened butter together with pumpkin puree, maple syrup, pumpkin pie spice, and a pinch of salt until the mixture is light and fluffy.
  5. Serve: Spread the pumpkin butter generously over the warm French toast slices. Sprinkle with powdered sugar and drizzle with additional maple syrup before serving.

Notes

  • Use day-old brioche for best soaking without becoming soggy.
  • Adjust pumpkin pie spice to taste; add cinnamon or nutmeg if desired.
  • Pumpkin butter can be made ahead and stored in the refrigerator for up to 3 days.
  • For a dairy-free option, substitute milk with almond or oat milk and use vegan butter.
  • Ensure the skillet stays at medium-low heat to prevent burning while allowing the inside to cook properly.
