Description

A cozy and nutritious Pumpkin Oatmeal recipe perfect for a quick breakfast. This creamy oatmeal is flavored with pumpkin puree and warm spices, sweetened with maple syrup, and topped with your choice of yogurt, nuts, and fruits for a satisfying and wholesome start to your day.

Ingredients

Oatmeal Base

  • 1 cup old fashioned oats
  • 1 cup water
  • 1 cup milk of choice (2% milk recommended)

Flavorings

  • 1/2 cup canned pumpkin puree
  • 2 tablespoons maple syrup (plus extra for topping)
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon kosher salt
  • 1/2 teaspoon vanilla extract

Toppings (Optional)

  • Greek yogurt
  • Maple syrup
  • Toasted pecans and/or pepitas
  • Dried fruit (such as raisins or dried cranberries)
  • Fresh fruit (such as chopped apples)

Instructions

  1. Combine Oats and Liquids: In a medium saucepan, combine the oats, milk, and water. Heat over medium heat until the mixture reaches a gentle simmer.
  2. Add Pumpkin and Spices: Once simmering, stir in the pumpkin puree, maple syrup, pumpkin pie spice, cinnamon, and kosher salt until well combined and fragrant.
  3. Cook Oatmeal: Continue cooking, stirring occasionally, for 2-3 minutes until the oats are soft but retain a slight chew for texture.
  4. Finish and Serve: Remove the saucepan from heat and stir in the vanilla extract. Taste and adjust sweetness or spices as desired by adding additional maple syrup or spices. Serve the oatmeal hot with preferred toppings such as Greek yogurt, nuts, dried or fresh fruits, and an extra drizzle of maple syrup.

Notes

  • Use old fashioned oats for the best texture; quick oats can become mushy.
  • Adjust the amount of pumpkin pie spice to your preference or substitute with a mix of nutmeg and cloves if unavailable.
  • If you prefer a creamier oatmeal, use whole milk or a non-dairy milk alternative like almond or oat milk.
  • To make this recipe vegan, substitute the milk with a plant-based milk and use a maple syrup or vegan sweetener.
  • Top with toasted nuts or seeds for added crunch and nutrition.
