Description

These Pumpkin Spice Rice Krispie Treats are a festive twist on the classic chewy marshmallow treat, infused with warm pumpkin pie spice and vibrant orange coloring for a perfect autumn-themed snack. Shaped like mini pumpkins and decorated with chocolate pretzel stems and cookie icing faces, they make a fun and delicious addition to Halloween parties or fall gatherings.

Ingredients

Main Ingredients

  • 4 tablespoons butter
  • 1 (10 or 12 ounce) package regular sized marshmallows
  • 1 tablespoon pumpkin pie spice
  • Orange gel food coloring, a few drops
  • 6 cups Rice Krispies cereal

For Greasing and Decorating

  • Cooking spray or extra butter (for greasing hands)
  • Chocolate covered pretzels (e.g. Flipz Milk Chocolate Covered Pretzels), broken into small pieces
  • Green cookie icing
  • Black cookie icing

Instructions

  1. Prepare baking sheet: Line a baking sheet with parchment paper or aluminum foil and set it aside for easy cleanup after forming the treats.
  2. Melt butter and marshmallows: In a large saucepan over medium-low heat, melt the butter. Once melted, add the marshmallows and stir continuously until completely melted and smooth.
  3. Add pumpkin spice and color: Stir in the pumpkin pie spice until well combined. Add a few drops of orange gel food coloring and mix thoroughly to achieve an even pumpkin color.
  4. Mix in cereal: Remove the saucepan from heat and immediately stir in the Rice Krispies cereal, making sure it's evenly coated with the marshmallow mixture.
  5. Shape pumpkin balls: While still warm, grease your hands with butter or cooking spray to prevent sticking. Scoop up the mixture and gently form it into 9 pumpkin-shaped balls approximately 2 ½ inches in diameter. Avoid packing too tightly to keep them soft.
  6. Place on baking sheet: Arrange the shaped balls on the prepared baking sheet to keep the surface clean.
  7. Cool and set: Allow the pumpkin treats to cool and set at room temperature for 30 minutes to 1 hour until firm enough to decorate.
  8. Prepare pretzel stems: Break or cut the chocolate-covered pretzels into small pieces, especially the rounded corners to create a hook shape for the pumpkin stems. Press one piece into the center on top of each pumpkin ball.
  9. Decorate faces: Use black cookie icing to draw eyes and mouths on the pumpkins. Get creative with classic jack-o'-lantern faces or fun expressions.
  10. Add leaves and vines: Using green cookie icing, draw leaves or vine designs around the pretzel stems to complete the pumpkin look. Let the icing dry and set thoroughly.
  11. Serve and enjoy: Once the icing is set, these festive Pumpkin Spice Rice Krispie Treats are ready to be served at your fall celebrations or anytime you want a seasonal sweet treat.

Notes

  • To prevent sticking, ensure your hands are well-greased before shaping the marshmallow mixture.
  • Do not pack the balls too tightly; this helps keep the treats soft and chewy rather than hard.
  • You can adjust the amount of pumpkin pie spice and food coloring according to your taste and desired color intensity.
  • For easier decorating, let the treats cool fully and the icing set completely before serving or storing.
  • Store treats in an airtight container to maintain freshness for up to 2 days.
