Description

These Pumpkin Spice Rice Krispie Treats are a festive and fun twist on the classic marshmallow cereal bars, perfect for fall celebrations. Featuring a blend of pumpkin pie spice and vibrant orange coloring, they’re shaped into adorable pumpkin balls and decorated with chocolate-covered pretzels as stems and colorful cookie icing for jack-o'-lantern faces. Easy to make and perfect for Halloween parties or cozy autumn snacks.

Ingredients

Main Ingredients

  • 4 tablespoons butter
  • 1 (10 or 12 ounce) package regular sized marshmallows
  • 1 tablespoon pumpkin pie spice
  • Orange gel food coloring (a few drops)
  • 6 cups Rice Krispies cereal

For Decoration

  • Cooking spray or extra butter (for greasing hands)
  • Chocolate covered pretzels (e.g., Flipz Milk Chocolate Covered Pretzels)
  • Green cookie icing (prepackaged with tip attached)
  • Black cookie icing (prepackaged with tip attached)

Instructions

  1. Prepare baking sheet: Line a baking sheet with parchment paper or aluminum foil and set aside for easy cleanup.
  2. Melt butter and marshmallows: In a large saucepan, melt the butter over medium-low heat. Once melted, add the marshmallows and stir continuously until completely melted and smooth.
  3. Add pumpkin spice and color: Stir in the pumpkin pie spice until well combined. Add a few drops of orange gel food coloring and mix until the color is evenly distributed.
  4. Combine cereal: Remove the saucepan from heat. Quickly stir in the Rice Krispies cereal until it is evenly coated with the marshmallow mixture.
  5. Form pumpkin shapes: While the mixture is still warm, grease your hands with butter or cooking spray to prevent sticking. Scoop up the mixture and gently form 9 pumpkin-shaped balls, approximately 2 ½-inch in diameter. Avoid packing too tightly to keep them soft.
  6. Place on baking sheet: Transfer the shaped treats onto the prepared baking sheet.
  7. Cool and set: Allow the pumpkin treats to cool and set at room temperature for 30 minutes to 1 hour.
  8. Prepare pretzel stems: Break or cut the chocolate-covered pretzels into small pieces by removing just the rounded corners so they create a small hook-like shape. Insert a piece into the center top of each pumpkin ball as a stem.
  9. Decorate faces: Use black cookie icing to draw eyes and mouths on the pumpkin treats. Get creative with traditional jack-o'-lantern faces or any expression you like.
  10. Add leaves and vines: Use green cookie icing to draw leaves or vines near the pretzel stem for added detail. Let the icing set completely.
  11. Serve and enjoy: Once the icing is set, serve your Pumpkin Spice Rice Krispie Treats at Halloween parties, fall gatherings, or whenever you want a festive seasonal treat.

Notes

  • For best texture, do not pack the rice krispie mixture too tightly when forming balls to keep them soft and chewy.
  • You can substitute other types of cereal if desired, but puffed rice works best for classic texture.
  • Store treats in an airtight container at room temperature for up to 2 days for freshness.
  • Adjust pumpkin pie spice amount to your taste preference.
  • Use gel food coloring sparingly to avoid altering flavor or texture.
