Description

This Quick and Easy Hot Honey Chicken Bowl combines tender baked chicken breasts with a zesty hot honey glaze, served over a bed of fluffy rice and sautéed fresh vegetables. Perfect for a flavorful weeknight dinner that comes together effortlessly in about 40 minutes.

Ingredients

Chicken and Sauce

  • 3-4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • ¼ cup low-sodium soy sauce
  • ¼ cup hot honey
  • 2 tbsp apple cider vinegar
  • Salt and pepper, to taste

Side

  • 2 cups cooked rice (white or brown)
  • 1 cup fresh vegetables (bell peppers, cucumbers, or avocado)
  • 1 tbsp olive oil (for sautéing)

Instructions

  1. Preheat and Prepare Chicken: Preheat your oven to 400°F (200°C). Lightly grease a baking dish with oil or non-stick spray. Season the chicken breasts generously with salt and pepper on both sides.
  2. Make the Sauce: In a mixing bowl, whisk together the minced garlic, low-sodium soy sauce, hot honey, and apple cider vinegar until well combined. Taste and adjust seasoning if needed.
  3. Coat and Bake Chicken: Place the seasoned chicken breasts into the prepared baking dish. Pour half of the hot honey soy sauce over the chicken, ensuring each piece is coated evenly.
  4. Bake the Chicken: Bake in the preheated oven for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (75°C) and is cooked through.
  5. Sauté Vegetables: While the chicken bakes, heat olive oil in a skillet over medium heat. Add your chosen fresh vegetables (such as sliced bell peppers or diced cucumbers) and sauté until tender, about 5-7 minutes.
  6. Rest and Slice Chicken: Once baked, remove the chicken from the oven and let it rest for a few minutes. Then slice the chicken breasts into strips or bite-sized pieces.
  7. Assemble the Bowl: Divide cooked rice evenly among serving bowls. Top with sautéed vegetables and sliced chicken. Drizzle the remaining hot honey soy sauce over the bowls for extra flavor.

Notes

  • Use low-sodium soy sauce to control salt content.
  • Adjust the amount of hot honey based on your preferred spice level.
  • Feel free to swap fresh vegetables depending on seasonal availability.
  • Letting the chicken rest helps retain its juices and keeps it tender.
  • Use a meat thermometer to ensure perfectly cooked chicken.
