Description

These easy and colorful Rainbow Fruit Skewers feature five fresh fruits arranged in a vibrant rainbow pattern and are topped with a drizzle of melted dark chocolate for an indulgent yet healthy treat. Perfect as a snack or a dessert, these fruit kabobs are fun for kids and adults alike, providing a delightful combination of natural sweetness and a touch of chocolate decadence.

Ingredients

Fruit Ingredients

  • 6 strawberries, hulled
  • 1 orange, peeled, segmented and cut in half
  • ½ of a ripe pineapple, peeled, cored and cut into 1-inch chunks (about 1 ½ cups pineapple chunks)
  • 1 banana, cut into 1-inch slices
  • 2 kiwi fruit, peeled and cut into 1-inch chunks

Chocolate Topping

  • 1 bar of semi-sweet or dark chocolate, vegan or dairy free if desired
  • Optional: flaky sea salt

Instructions

  1. Prepare the Fruit Skewers: Arrange the prepared fruit pieces onto wooden skewers in rainbow order—starting with strawberry, then orange, pineapple, banana, and kiwi. Place the assembled skewers on a large plate or a baking pan lined with parchment or wax paper to keep them stable and prevent sticking.
  2. Melt the Chocolate: Break the dark chocolate bar into small pieces and place them in a microwave-safe bowl. Microwave in 30-second intervals, stirring thoroughly between each, until the chocolate is fully melted and smooth.
  3. Drizzle Chocolate and Add Salt: Carefully drizzle the melted chocolate over the fruit skewers. If desired, sprinkle a pinch of flaky sea salt over the top to enhance the flavors.
  4. Set the Chocolate: Transfer the plate with the fruit kabobs to the freezer and let them chill for about 5 minutes or until the chocolate hardens. Once set, the skewers are ready to be enjoyed!

Notes

  • Fruit kabobs are best eaten fresh and will stay fresh in the refrigerator for up to 1 day.
  • If you prefer not to use dark chocolate, serve the fruit skewers with vanilla yogurt for dipping or enjoy them plain.
  • Feel free to experiment with other fruit varieties or dipping sauces to customize your fruit skewers.
