- 15 oz coconut milk
Other
- 1 lb frozen dumplings
- 1 lime, juiced
- ¼ cup cilantro, chopped
- Salt, to taste

Instructions
- Sauté aromatics: Heat a Dutch oven or large pot over medium heat and drizzle with cooking oil. Add diced onions and sauté until soft, about 3-4 minutes. Add minced garlic and cook for about 30 seconds until fragrant.
- Add vegetables: Add broccoli florets, diced zucchini, sliced carrots, and red bell pepper. Sauté for 30 seconds to slightly soften the vegetables and combine flavors.
- Incorporate curry paste: Stir in 1 to 2 tablespoons of Thai red curry paste according to your spice preference, mixing thoroughly with the vegetables.
- Add liquids and seasonings: Pour in 4 cups of chicken broth and 1 tablespoon of fish sauce. Increase heat and bring the mixture to a boil.
- Add coconut milk: Pour in the coconut milk and return the soup to a boil, stirring to combine all flavors smoothly.
- Cook dumplings: Add the frozen dumplings to the boiling soup. Cook them following the package instructions, ensuring they are fully cooked through, usually about 6-8 minutes.
- Finish the soup: Stir in freshly squeezed lime juice and season with salt to taste. Adjust seasoning as needed.
- Serve: Garnish with chopped cilantro before serving. Enjoy your warm, flavorful red curry dumpling soup!
