Ingredients
Donuts
- 1 cup all-purpose flour (119g)
- 2 tablespoons cocoa powder
- 3/4 cup brown sugar
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/2 cup buttermilk (113g)
- 3 tablespoons butter (melted)
- 1 teaspoon vanilla extract
- 1 large egg (at room temperature)
- 4 drops red food coloring
- 1 teaspoon espresso powder
Cream Cheese Glaze
- 3 ounces cream cheese (90g, soft, room temp)
- 3 tablespoons unsalted butter (soft, room temp)
- 1 teaspoon vanilla extract
- 2 cups confectioners' sugar (sifted)
- 4 tablespoons milk
Instructions
- Preheat Oven: Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius) to prepare for baking the donuts.
- Prepare Donut Pan: Butter a donut pan thoroughly to prevent the batter from sticking during baking.
- Mix Dry Ingredients: In a large bowl, whisk together all-purpose flour, cocoa powder, brown sugar, salt, baking powder, and espresso powder until well combined.
- Combine Wet Ingredients: In a separate bowl, whisk the buttermilk, melted butter, vanilla extract, and egg until smooth.
- Incorporate Wet and Dry Mixtures: Fold the wet ingredients into the dry ingredients carefully, mixing until just combined to avoid overmixing which can make donuts tough.
- Add Red Food Coloring: Add 4 drops of red food coloring and gently mix until the batter reaches your desired shade of red.
- Fill Donut Pan: Transfer the batter into a piping bag and snip off the tip. Pipe the batter evenly into the prepared donut pan cavities, filling each about 3/4 full.
- Bake Donuts: Bake the donuts in the preheated oven for approximately 10 minutes or until a toothpick inserted into the center comes out clean.
- Cool Donuts: Remove from the oven and let the donuts cool completely on a wire rack to ensure they firm up before glazing.
- Prepare Cream Cheese Glaze: Using a stand mixer fitted with a paddle attachment, beat the softened cream cheese and vanilla extract together until smooth and creamy.
- Add Remaining Glaze Ingredients: Gradually add sifted confectioners' sugar and milk to the cream cheese mixture, adjusting the milk amount to reach your desired glaze consistency. Beat the mixture for about 5 minutes until light and fluffy.
- Glaze Donuts: Dip the cooled donuts into the cream cheese glaze, ensuring an even coating.
- Decorate: Sprinkle leftover crumbs or any desired toppings over the glazed donuts to finish.
