Description

This Red, White & Blue Poke Cake is a festive and colorful dessert perfect for patriotic celebrations. Featuring a moist white cake infused with vibrant layers of cherry and berry blue Jell-o that soak into every bite, it is topped with fluffy whipped topping and decorated with swirls of red and blue food coloring and sprinkles. The poke technique creates flavorful pockets throughout the cake, making it both visually appealing and deliciously refreshing.

Ingredients

Cake

  • One white cake mix + ingredients to prepare it (usually eggs, oil, and water as per package instructions)

Jell-o Layers

  • One 3 oz. box of Berry Blue Jell-o
  • One 3 oz. box of Cherry Jell-o
  • 2 cups boiling water (1 cup per Jell-o)
  • 1 cup cold water (½ cup per Jell-o)

Topping

  • One 8 oz. tub of whipped topping (thawed)
  • Red & blue food coloring (optional)
  • Patriotic sprinkles or jimmies (optional)

Instructions

  1. Prepare the Cake: Prepare the white cake mix according to the package directions, including all required ingredients like eggs, oil, and water. Bake as instructed and allow the cake to cool completely to room temperature.
  2. Make Poke Holes: Using a straw or handle of a wooden spoon, poke holes all over the surface of the cooled cake. These holes will allow the Jell-o to seep into the cake for extra flavor and color.
  3. Prepare Jell-o Mixtures: For each Jell-o box, dissolve the powder in 1 cup of boiling water, then add ½ cup cold water (slightly less than package instructions) and stir well.
  4. Apply Blue Jell-o: Carefully spoon or pour the Berry Blue Jell-o over one portion of the cake, ensuring the liquid seeps into the poke holes evenly.
  5. Apply Red Jell-o: Carefully spoon or pour the Cherry Jell-o over the remaining portions of the cake, again making sure the liquid fills the poke holes.
  6. Chill to Set Jell-o: Refrigerate the cake for at least 3 to 4 hours, or preferably overnight, to allow the Jell-o to set fully within the cake.
  7. Add Whipped Topping: Once the Jell-o has set, spread the thawed whipped topping evenly over the surface of the cake.
  8. Decorate Topping: Just before serving, use a toothpick dipped in red and blue food coloring to create swirls and accents within the whipped topping for extra patriotic flair.
  9. Add Sprinkles: Top with patriotic sprinkles or jimmies to finalize the festive look.
  10. Serve: Cut the cake into 10 servings and enjoy!
  11. Store Leftovers: Refrigerate any leftover cake to maintain freshness.

Notes

  • Be sure the cake is completely cooled before poking holes to prevent crumbling.
  • You can customize the food coloring swirls in the whipped topping to your preference or omit them if desired.
  • If you prefer, substitute homemade white cake for the cake mix for a from-scratch option.
  • Keep the cake refrigerated after applying Jell-o and whipped topping to ensure it sets and stays fresh.
  • Poke holes evenly to allow the Jell-o to disperse well throughout the cake for colorful and flavorful bites.
