Description
A simple and flavorful Roasted Delicata Squash recipe enhanced with parmesan, fresh herbs, and lemon zest. This easy 30-minute side dish offers tender, golden-brown squash slices with a savory, cheesy finish perfect for any meal.
Ingredients
Squash and Oil
- 1 delicata squash (about 14 oz, washed and dried)
- 1 tablespoon olive oil
- 1 garlic clove (crushed)
Seasonings
- 1/4 teaspoon kosher salt
- Black pepper (to taste)
Parmesan Herb Topping
- 1/4 cup fresh grated parmesan
- 2 tablespoons finely chopped parsley
- 1 teaspoon finely chopped fresh thyme
- 1/2 teaspoon lemon zest
- Cooking spray (for baking sheet)
Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper and lightly spray it with cooking spray to prevent sticking.
- Prepare Squash: Slice the delicata squash in half lengthwise and scoop out the seeds using a spoon. Then, slice the seeded halves into 1/4-inch thick half-circle slices. Transfer these slices to a large bowl.
- Mix Parmesan Herb Topping: In a small bowl, combine the fresh grated parmesan, finely chopped parsley, fresh thyme, and lemon zest. Set this mixture aside.
- Season Squash: Drizzle the olive oil, crushed garlic, kosher salt, and black pepper over the squash slices. Toss the slices well to ensure they are evenly coated with the seasoning and oil.
- Arrange and Add Topping: Lay the seasoned squash slices flat on the prepared baking sheet in a single layer. Evenly pour and sprinkle the parmesan herb mixture over the squash slices.
- Roast: Bake the squash in the center of the preheated oven for about 25 minutes, or until the slices are soft and the edges turn golden brown.
Notes
- Delicata squash skin is edible and softens when roasted, so no need to peel.
- Adjust garlic and herbs according to your taste preference.
- The lemon zest adds a fresh brightness that complements the savory parmesan.
- Use freshly grated parmesan for the best flavor and melting quality.
- You can double the recipe if serving more people; just use multiple baking sheets to avoid crowding.
