Ingredients
Wet Ingredients
- 1 sweet potato (about 2 cups, mashed)
- 5 eggs
- 1 cup Nordica 2% Cottage Cheese
Dry Ingredients
- 2 cups all purpose flour
- 1 tsp baking powder
- 1/2 tsp chili powder
- 1/2 tsp ground cumin
- 1 tsp salt
Other Ingredients
- 1/4 cup pickled jalapenos (diced)
- 1/3 cup sliced green onions (whites and greens)
- 1/3 cup cheddar cheese (shredded)
Instructions
- Preheat the oven: Preheat your oven to 400°F (200°C) and prepare a 12-cavity muffin tray by greasing or lining it to prevent sticking.
- Combine wet ingredients: In a medium bowl, mash the sweet potato until smooth, then whisk it together thoroughly with the eggs and cottage cheese for a creamy base.
- Mix dry ingredients into wet: Gradually add the flour, baking powder, chili powder, cumin, and salt to the wet mixture, stirring well to create a well-incorporated batter without lumps.
- Add flavorings: Fold in the sliced green onions, diced pickled jalapenos, and shredded cheddar cheese, reserving a small amount of cheddar for topping the muffins.
- Fill muffin cups: Spoon the batter evenly into the 12 muffin cups, approximately 1/3 cup per cavity, then sprinkle the reserved cheddar cheese on top of each muffin.
- Bake: Place the muffin tray in the oven and bake for 23-27 minutes, or until a toothpick inserted into the center of a muffin comes out clean, indicating they are fully cooked.
Notes
- You can substitute cheddar cheese with a sharper or milder cheese depending on your preference.
- For a spicier kick, add extra diced jalapenos or a pinch of cayenne pepper.
- Muffins can be stored in an airtight container in the refrigerator for up to 4 days or frozen for up to 3 months.
- Ensure the sweet potato is well mashed and free of large lumps for a smooth batter.
- These muffins make a great breakfast or snack option, served warm or at room temperature.
