Ingredients
Chili and Sauce Ingredients
- 8 dried guajillo chiles, stems removed
- 2 dried pasilla chiles, stems removed
- 4 cups hot water
- 1 medium white onion, halved and divided
- 1 Roma tomato, quartered
- 4 garlic cloves
- 1½ teaspoons chicken bouillon granules
- 8 whole peppercorns
- 1 teaspoon dried thyme
- 1 teaspoon dried Mexican oregano
- ½ teaspoon cumin seeds
Beef and Cooking Ingredients
- 2 tablespoons canola oil
- 1 boneless beef chuck roast (3 pounds), quartered
- 3 bay leaves
For Assembling Tacos
- 20 corn tortillas (6 inches)
- Shredded Oaxaca cheese or other melting cheese
- Optional toppings: chopped onion, chopped cilantro, sliced radishes, lime wedges
Instructions
- Rehydrate the chiles: Place the dried guajillo and pasilla chiles in a large bowl. Pour 4 cups of hot water over them and let them soak for 30 minutes until softened and plumped, which reactivates their flavors.
- Make the consommé: Transfer the rehydrated chiles along with the soaking liquid into a blender. Add half of the onion, quartered Roma tomato, garlic cloves, chicken bouillon granules, peppercorns, dried thyme, Mexican oregano, and cumin seeds. Blend until smooth. Then strain this mixture through a fine-mesh sieve to create a silky consommé without any chunks.
- Sear the beef: Heat 2 tablespoons of canola oil in a large skillet over medium-high heat. Add the quartered chuck roast pieces and sear for about 2 to 3 minutes per side until each piece develops a golden brown crust, which locks in flavor.
- Slow-cook the birria: Place the seared beef pieces into the slow cooker. Add the bay leaves and the remaining half of the onion. Pour the strained consommé over the beef and stir gently to combine. Cover and cook on low heat for 5 to 6 hours until the meat becomes tender and easily pulls apart.
- Shred the meat: Remove the bay leaves and onion halves from the slow cooker and discard them. Transfer the beef to a cutting board and shred it with two forks. Return the shredded meat to the slow cooker to keep it moist and flavorful.
- Make the tacos: One at a time, dip each corn tortilla into the hot cooking liquid, ensuring it is thoroughly coated. Place the tortilla on a griddle, comal, or cast-iron skillet over medium heat. Sprinkle with shredded cheese and cook until the cheese melts. Add a portion of shredded beef on top, then fold the tortilla over to form a taco. For authentic texture, cook the folded taco until crisp and golden on both sides. Serve with optional toppings such as chopped onion, cilantro, sliced radishes, and lime wedges alongside a small bowl of the consommé for dipping.

- Straining the sauce ensures a smooth consommé, which is key to authentic birria tacos.
- Using a low slow-cook setting yields tender meat that shreds easily without drying out.
- Dipping tortillas in the cooking liquid before grilling infuses them with rich flavor while helping the cheese melt perfectly.
- Serve birria tacos with fresh lime wedges and radishes for contrast and brightness.
