Ingredients
Slow Cooker Ingredients
- 48 oz Pasta Sauce or Marinara (two 24-oz. jars) - Ragu, Rao's or Newman's Own recommended
- 1 ½ lbs. boneless skinless chicken breasts
- ½ tsp. salt
- ½ tsp. pepper
- ½ tsp. oregano or Italian Seasoning
Pasta and Cheese Ingredients
- 1 lb. penne pasta, cooked according to package directions
- 3 cups shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
Instructions
- Prepare Slow Cooker: Add the chicken breasts to a 6-quart or larger slow cooker. Sprinkle the salt, pepper, and oregano evenly over the chicken. Pour the marinara or pasta sauce on top to cover the chicken.
- Cook Chicken: Cover the slow cooker with its lid and cook on HIGH for 4 hours or on LOW for 6 to 8 hours. Avoid opening the lid during cooking to keep heat consistent and ensure the chicken cooks evenly.
- Cook Pasta: When the chicken has finished cooking, prepare the penne pasta on the stovetop according to the package instructions until al dente. Drain the pasta thoroughly to prevent excess water from diluting the sauce later.
- Shred Chicken: Using two forks, shred the cooked chicken directly in the slow cooker until pieces are bite-sized and well mixed with the tomato sauce.
- Combine Pasta and Cheese: Add the drained penne pasta into the slow cooker with the shredded chicken and sauce. Stir everything gently to combine, then spread the pasta out evenly. Sprinkle the shredded mozzarella cheese and grated Parmesan cheese evenly over the top.
- Melt Cheese: Cover the slow cooker again and let it cook for an additional 15 minutes on LOW, or until the cheeses have melted and are bubbly.
- Serve: Once the cheese is melted, serve the Chicken Parmesan Pasta hot, garnishing with extra Parmesan or fresh basil if desired. Enjoy your comforting and flavorful meal!
Notes
- No Breading: This recipe skips breading the chicken because slow cookers cannot crisp breaded chicken, but the dish still captures all the delicious chicken Parmesan flavors.
- Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
