Description

Ingredients

Chicken and Vegetables

  • 1.5 lb chicken breasts
  • 1 red bell pepper, diced
  • 1/2 large yellow onion, diced
  • 2 garlic cloves, chopped

Peanut Sauce

  • 1/2 cup creamy peanut butter (or crunchy with minimal ingredients)
  • 1/2 cup chicken broth
  • 1/4 cup soy sauce
  • 1 tbsp honey
  • 1 tsp sesame oil
  • 1 tsp chili garlic paste

Finishing Touches

  • 1 tbsp lime juice
  • 2 tbsp chopped cilantro


Instructions

  1. Prepare the Slow Cooker: Add the diced red bell pepper, diced yellow onion, and chopped garlic to the bottom of your slow cooker. Place the chicken breasts on top of the vegetables.
  2. Make the Peanut Sauce: In a bowl or glass measuring cup, whisk together the peanut butter, chicken broth, soy sauce, honey, sesame oil, and chili garlic paste until smooth and well combined.
  3. Cook the Chicken: Pour the prepared peanut sauce evenly over the chicken breasts in the slow cooker. Cover and cook on HIGH for 2 to 3 hours or on LOW for 4 to 5 hours, until the chicken is fully cooked and tender.
