Ingredients
Oatmeal Base
- 1/2 tablespoon coconut oil
- 1 small pear, finely chopped
- 1/2 teaspoon cinnamon
- 1/4 teaspoon cardamom
- 1/4 teaspoon nutmeg
- Pinch of salt
- 1 cup unsweetened almond milk (or milk of choice)
- 1 cup water
- 3/4 cup rolled oats
- 2 tablespoons steel cut oats
- 2 tablespoons ground flax seeds
- 1 tablespoon chia seeds
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
Spiced Pear Topping
- 1 pear, chopped
- 1/2 tablespoon coconut oil
- 1/2 teaspoon cinnamon
- 1/4 teaspoon cardamom
- 1/4 teaspoon nutmeg
- 1 tablespoon maple syrup
Instructions
- Saute Pears for Oatmeal Base: Place the coconut oil in a medium saucepan over medium heat. When hot, add the finely chopped pear along with cinnamon, cardamom, nutmeg, and a pinch of salt. Sauté for 5 minutes until the pears soften and the spices are fragrant.
- Add Liquids and Grains: Pour in the almond milk and water, stirring to combine. Add the rolled oats, steel cut oats, ground flax seeds, and chia seeds to the pot.
- Cook Oatmeal: Reduce heat to medium-low and cook the oatmeal mixture for 10 to 15 minutes, stirring occasionally, until the oats have absorbed most of the liquid and the texture is creamy and thickened.
- Prepare Spiced Pear Topping: While the oatmeal cooks, heat the coconut oil in a small skillet over medium heat. Add the chopped pear with the cinnamon, cardamom, and nutmeg, cooking until the pears start to soften, about 3 to 5 minutes.
- Caramelize Pears: Lower the heat to medium-low, add the maple syrup, and continue cooking the pears until they soften further and caramelize slightly in the syrup. Remove from heat and set aside.
- Finish and Serve: Once the oatmeal is done, stir in the vanilla extract and the remaining maple syrup. Divide the oatmeal into serving bowls and generously top each with the spiced pear topping.
