Description

This vibrant Shrimp Tacos recipe features perfectly seasoned and broiled shrimp served with a tangy cabbage slaw, creamy crema, and fresh toppings like avocado and pico de gallo. Ready in under 25 minutes, these tacos offer a delicious blend of smoky, spicy, and fresh flavors that make for an easy and satisfying meal.

Ingredients

Slaw

  • 3 cups shredded purple cabbage (or coleslaw mix)
  • 1/2 cup diced red onion
  • 1 tablespoon olive oil
  • 2 tablespoons fresh lime juice
  • Salt and pepper (to taste)

Shrimp

  • 2 pounds shrimp (shells/tails removed and deveined)
  • 3 tablespoons olive oil
  • 2 tablespoons Cajun seasoning

To Serve

  • 12 corn tortillas (warmed)
  • Cheese: Cotija or Queso Fresco (crumbled)
  • Cilantro Lime Crema (Mexican Crema, or Sour Cream)
  • Avocado or Guacamole
  • Pico De Gallo
  • Cilantro
  • Jalapeños
  • Lime Wedges

Instructions

  1. Prepare the Slaw: In a medium-sized bowl, combine shredded cabbage, diced red onion, olive oil, and fresh lime juice. Season with salt and pepper to taste. Toss everything together until well mixed. Let the slaw rest on the counter to marinate for flavor development or refrigerate for up to 24 hours.
  2. Preheat Oven: Set your oven to broil on high. Line a baking sheet with aluminum foil and lightly spray it with non-stick cooking spray. Set aside the prepared sheet for the shrimp.
  3. Season the Shrimp: Rinse the shrimp under cold water and pat them dry with paper towels. Place the shrimp in a medium bowl, add olive oil and Cajun seasoning, then toss thoroughly until each shrimp is evenly coated with the seasoning and oil.
  4. Broil the Shrimp: Arrange the shrimp in a single layer on the prepared baking sheet. It's fine if they are close together, but try to keep an even layer. Place the shrimp under the broiler and cook for 2 minutes. Rotate the baking sheet 180 degrees and broil for an additional 2 minutes or until the shrimp turn opaque and are cooked through.
  5. Assemble the Tacos: Warm the corn tortillas and fill each with the broiled shrimp. Top with the cabbage slaw, a sprinkle of crumbled Cotija or Queso Fresco cheese, a drizzle of cilantro lime crema, and other desired toppings such as avocado slices or guacamole, pico de gallo, fresh cilantro, jalapeños, and lime wedges. Serve immediately for best flavor and texture.

Notes

  • To save time, the slaw can be prepared a day in advance and refrigerated for enhanced flavor.
  • Adjust the amount of Cajun seasoning to control the spice level of the shrimp.
  • Make sure to pat the shrimp dry before seasoning to ensure they broil properly and develop a nice texture.
  • Use fresh lime juice for the best brightness in the slaw and crema.
  • If you prefer, substitute corn tortillas with flour tortillas for a softer feel.
  • Broil shrimp closely monitoring to avoid overcooking, as shrimp cook quickly.
