Ingredients

Chicken

  • 1 pound boneless skinless chicken breasts, diced into 1-inch pieces
  • Salt and pepper, to taste
  • 1 Tablespoon olive oil

Wrap Filling

  • 2 hearts romaine lettuce, shredded
  • 1 cup sliced strawberries
  • 1/4 cup sliced almonds (optional)
  • 1 cup creamy poppy seed dressing, divided

  • 4 large flour tortillas


Instructions

  1. Cook the Chicken: Heat the olive oil in a large non-stick skillet over medium heat. Add the diced chicken breasts, season with salt and pepper, and cook for 10 to 12 minutes until the chicken is thoroughly cooked and no longer pink in the center.
  2. Prepare the Filling: While the chicken is cooking, combine the shredded romaine lettuce, sliced strawberries, 1/2 cup of the creamy poppy seed dressing, and sliced almonds in a large bowl. Gently toss everything together to evenly coat the mixture with the dressing.
  3. Warm the Tortillas: Place the flour tortillas in the microwave and heat each for about 10 seconds or until just warm to make them more pliable and easier to wrap.
  4. Assemble the Wraps: Lay one warmed tortilla flat, then place 1/4 of the cooked chicken down the center. Drizzle each portion of chicken with 1 tablespoon of the remaining poppy seed dressing. Top with 1/4 of the strawberry and lettuce mixture. Wrap the tortilla tightly around the filling. Repeat for the remaining tortillas and ingredients.
  5. Serve: Serve the wraps immediately with any remaining poppy seed dressing on the side for dipping or extra flavor.
