Instructions

  1. Combine ingredients: Pour the strawberry tops and sugar into a large stockpot, then cover them with the water ensuring all tops are submerged.
  2. Bring to boil and simmer: Heat the mixture on the stove until it reaches a boil, then reduce the heat and let it simmer gently for 10-15 minutes to extract the flavor from the strawberry tops.
  3. Strain mixture: Remove the pot from the burner and carefully strain out the strawberry tops using a fine mesh strainer or cheesecloth to leave a clear strawberry-infused liquid.
  4. Return juice to pot: Pour the strained juice back into the stockpot in preparation for reduction.
