Soup Base

Instructions

  1. Prepare Sweet Potatoes: Peel and cut the sweet potatoes into 1-inch cubes to ensure even cooking and blending later.
  2. Sauté Vegetables: In a large stockpot over medium-high heat, melt the butter. Add the chopped onion and sauté for 3 to 4 minutes until softened. Then add the celery and continue to sauté for 5 more minutes. Stir in the garlic and cook for an additional minute to release its aroma.
  3. Simmer the Soup: Add the cubed sweet potatoes, vegetable stock, cinnamon stick, and nutmeg to the pot. Season with kosher salt and ground black pepper to taste. Increase heat to high and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer uncovered for 20 minutes, or until the sweet potatoes are tender and can be easily pierced with a fork.
  4. Blend the Soup: Remove the cinnamon stick. Use an immersion blender directly in the pot or transfer the soup in batches to a standing blender to puree until smooth and creamy.
