Ingredients
Main Ingredients
- 1 pound taco seasoned ground beef (either leftover or freshly cooked)
- 8 ounces Jiffy Cornbread Muffin mix (1 box)
- 15 ounces whole kernel corn (drained)
- 15 ounces creamed corn (not drained)
- 1 cup sour cream
- 1/2 cup melted butter
- 1 cup shredded cheddar cheese
- 1/4 cup diced green chilies (drained)
For Serving
- Pico de gallo
- Sour cream
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350ºF (175ºC). Grease a 9x9" deep dish or 9x13" baking pan with nonstick cooking spray to prevent sticking and promote even cooking.
- Mix Ingredients: In a large mixing bowl, combine the taco seasoned ground beef, Jiffy Cornbread Muffin mix, whole kernel corn, creamed corn (including the liquid), sour cream, melted butter, shredded cheddar cheese, and diced green chilies. Stir everything thoroughly to create a consistent batter-like mixture.
- Pour and Bake: Pour the combined mixture into the prepared baking pan, spreading evenly. Place the pan in the preheated oven.
- Bake Until Set: Bake for approximately 60-70 minutes if using a square 9x9" deep dish pan, or 45-50 minutes if using a 9x13" pan. The casserole is done when lightly browned on top and set in the center without jiggle. Baking times may vary based on pan depth, so watch closely.
- Serve: Remove the casserole from the oven and serve immediately. Top with fresh pico de gallo and a dollop of sour cream for added freshness and creaminess.
Notes
- Use a deep dish 9" pan for a thicker casserole or a 9x13" pan for a thinner one; adjust baking time accordingly.
- Ensure the center is fully set to avoid a runny texture.
- Taco seasoning can be homemade or store-bought depending on your preference.
- You can substitute ground turkey or chicken for a leaner protein option.
- Leftover casserole can be refrigerated for up to 3 days and reheated in the oven.
