- 4 ears corn, shucked and cut fresh off the cob
- 1 large red or orange bell pepper, diced
- ½ medium red onion, diced
- 1 to 2 jalapeños, seeded and diced
- ⅓ cup fresh chopped cilantro
- 2 small limes, juiced

- 1 teaspoon honey
- ½ teaspoon kosher salt

- Prepare the vegetables: Shuck the corn and carefully cut the kernels off the cobs. Dice the red or orange bell pepper and half a medium red onion into small even pieces. Seed and dice 1 to 2 jalapeños according to how much heat you prefer. Chop ⅓ cup of fresh cilantro finely.
- Combine ingredients: In a medium bowl, add the fresh corn, diced bell pepper, red onion, jalapeños, and chopped cilantro. Drizzle with 2 tablespoons of extra virgin olive oil and the juice of 2 small limes. Add 1 teaspoon honey, ½ teaspoon kosher salt, and freshly ground black pepper to taste.
- Mix and season: Stir all the ingredients well using a spoon to evenly distribute flavors and coat everything with the lime juice and olive oil dressing.
- Serve and garnish: Garnish the salsa with extra cilantro leaves if desired. Serve immediately with multigrain tortilla chips, or use as a topping for grilled chicken, steak, salmon, fish tacos, or shrimp for a fresh boost of flavor.
