Description

These BEST Homemade Crunch Bars are delicious, easy-to-make no-bake treats combining crispy rice cereal with a rich, melty blend of peanut butter, chocolate chips, maple syrup, and coconut oil. Perfect as a quick snack or dessert, they require minimal prep and are refrigerated to set into satisfying bars.

Ingredients

Base Ingredients

  • 3 cups crispy rice cereal

Chocolate & Nut Butter Mixture

  • 1 1/2 cups chocolate chips
  • 1 cup peanut butter (can substitute any nut or seed butter)
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil (can sub for grass fed butter)

Instructions

  1. Prepare Baking Dish: Line an 8 x 8-inch baking dish or a deep baking tray of your choice with parchment paper to prevent sticking and set it aside for later use.
  2. Mix Dry Ingredients: Place the 3 cups of crispy rice cereal into a large mixing bowl and set it aside, ensuring it's ready for the chocolate mixture.
  3. Melt Wet Ingredients: In a microwave-safe bowl or on the stovetop, combine the chocolate chips, peanut butter, maple syrup, and coconut oil. Heat gently until all ingredients are melted, then remove from heat and whisk thoroughly until the mixture is smooth and fully incorporated.
  4. Combine & Coat: Pour the melted chocolate and peanut butter mixture over the crispy rice cereal. Stir well with a spatula or spoon until every piece of cereal is evenly coated.
  5. Set the Bars: Transfer the coated cereal mixture into the prepared baking dish, pressing it down evenly. Place the dish in the refrigerator and chill for at least one hour, or until firm and set.
  6. Cut & Serve: Once firm, remove the set mixture from the baking dish using the parchment paper edges. Cut into bars and serve as a tasty snack or dessert.

Notes

  • You can substitute peanut butter with any nut or seed butter of your choice, such as almond or sunflower seed butter.
  • If coconut oil is not available, grass-fed butter can be used as an alternative.
  • Make sure to use parchment paper to easily lift the bars out of the baking dish without sticking.
  • Refrigerate the bars for at least an hour to ensure they are firm and hold their shape when cut.
  • These bars are best stored in an airtight container in the refrigerator to maintain freshness and texture.
