Description

This TikTok Viral Cucumber and Bell Pepper Salad is a refreshing and vibrant dish that combines crunchy mini cucumbers and sweet mini bell peppers with a creamy, flavorful dressing made from olive oil, rice vinegar, tamari, maple syrup, sesame oil, garlic, and ginger. Perfect for a quick, healthy snack or a light side dish, it comes together in just 10 minutes and is packed with bright, zesty, umami-rich flavors.

Ingredients

Salad Ingredients

  • 4 mini cucumbers, sliced
  • 10 mini sweet peppers, sliced

Dressing Ingredients

  • ½ tablespoon Everything But the Bagel Seasoning
  • 1 teaspoon chili crisp
  • ¼ cup extra virgin olive oil
  • ¼ cup unseasoned rice vinegar
  • 1 ½ tablespoons tamari or soy sauce
  • 1 ½ tablespoons maple syrup
  • 2 teaspoons sesame oil
  • 1 large clove garlic
  • 1 inch knob fresh ginger
  • Pinch black pepper

Instructions

  1. Prepare the Dressing: Add the garlic clove, fresh ginger, extra virgin olive oil, rice vinegar, tamari or soy sauce, maple syrup, sesame oil, and a pinch of black pepper into a blender. Blend all ingredients until the dressing becomes smooth and creamy. Set the dressing aside for later use.
  2. Combine Salad Ingredients: In a large bowl, place the sliced mini cucumbers and mini sweet peppers.
  3. Dress the Salad: Pour ¼ cup of the prepared dressing over the vegetables. Sprinkle the Everything But the Bagel Seasoning and chili crisp over the mixture. Toss everything thoroughly to combine and evenly coat the vegetables. Taste the salad and adjust by adding more dressing, bagel seasoning, or chili crisp if desired for more flavor or heat.

Notes

  • For extra spice, increase the amount of chili crisp according to your taste preference.
  • The dressing can be made ahead and refrigerated for up to 3 days.
  • Use tamari instead of soy sauce for a gluten-free option.
  • Mini cucumbers and sweet mini peppers provide a nice crunch, but regular cucumbers and bell peppers can also be used.
  • Make sure to slice the vegetables thinly for better texture and flavor absorption.
