  • 1 regular size tortilla or wrap of your choice (I used Flatout Flatbread)
  • 2 Laughing Cow spreadable light swiss cheese wedges
  • 3 oz. deli turkey (I used Boar’s Head)
  • Small handful baby spinach (optional)

Servings

  • 1/2 cup mixed berries (70g) (for serving)
  • 1/4 cup mini pretzels (23g) (for serving)


Instructions

  1. Prepare the bread and cheese: Lay your flatbread or tortilla on a clean, flat surface. Spread the two Laughing Cow light Swiss cheese wedges evenly over the entire surface of the flatbread, ensuring full coverage to help the other ingredients stick and add flavor.
  2. Add turkey and spinach: Place the deli turkey slices over two-thirds of the tortilla, leaving about one-third of the tortilla plain with only cheese spread. Add a small handful of baby spinach on top of the turkey as an optional fresh and nutrient-rich addition.
  3. Roll the pinwheels: Starting from the turkey-covered side, begin rolling the tortilla tightly using both hands. Keep the roll snug, gently tucking in the spinach so it doesn’t fall out during slicing.
  4. Slice and serve: Cut the rolled tortilla into 5 equal pinwheel pieces. Arrange the pinwheels on a plate or pack them in a container for meal prep. Serve with 1/2 cup of mixed berries and 1/4 cup of mini pretzels to complement the savory flavors with sweetness and crunch.

Notes

  • You can swap spinach for other greens like arugula or romaine lettuce based on preference.
