Ingredients

Chili

  • 2 tbsp chili powder
  • 2 tsp coconut sugar

Fries

  • 1 recipe crispy baked french fries (or 4-5 cups frozen fries)

Nacho Cheese

  • 1 recipe vegan nacho cheese


Instructions

  1. Prepare the Chili: In a large pot, heat the oil over medium heat. Add the diced onion and sauté for 3-5 minutes until translucent. Add the minced garlic and cook for 1 more minute until fragrant. Stir in the diced tomatoes, kidney beans, black beans, chili powder, coconut sugar, cumin, smoked paprika, and salt. Mix well to combine all ingredients. Bring the mixture to a rapid boil, then reduce the heat to low and simmer partially covered for 35-45 minutes, stirring occasionally to prevent sticking.
  2. Cook the Fries: While the chili simmers, prepare the French fries. If using frozen fries, bake according to the package instructions until crispy. If making homemade baked fries, follow your preferred recipe to achieve golden, crispy fries.
