A refreshing Watermelon Salad combining juicy watermelon, crisp English cucumber, fresh mint, and tangy feta cheese, tossed in a zesty lime and olive oil dressing. Perfect for a light, healthy appetizer or side dish in just 15 minutes.
Ingredients
Dressing
- 3 tablespoons extra virgin olive oil
- 1½ tablespoons fresh lime juice
Salad
- 4 cups seedless watermelon, cubed
- 1½ cups seedless English cucumber, cubed (about 1 medium cucumber)
- ⅓ cup fresh mint leaves, chopped or torn
- ½ cup feta cheese, crumbled
Instructions
- Prepare the Dressing: In a small mixing bowl, whisk together the extra virgin olive oil and fresh lime juice until well combined. Set aside to allow flavors to meld.
- Combine Salad Ingredients: In a large mixing bowl, add the cubed watermelon, cubed English cucumber, and chopped or torn fresh mint leaves. Gently toss to mix the ingredients evenly.
- Add Dressing: Drizzle the prepared dressing over the watermelon and cucumber mixture. Carefully toss the salad to coat all pieces with the dressing without bruising the fruit.
- Finish with Feta: Sprinkle the crumbled feta cheese evenly over the top of the salad for a salty, creamy contrast. Serve the salad immediately for best freshness and texture.
Notes
- Use seedless watermelon and seedless English cucumber for easier preparation and a better eating experience.
- For an extra crunch, consider adding toasted pepitas or sliced almonds.
- Adjust lime juice amount to taste for desired acidity.
- Serve immediately to prevent the salad from becoming soggy.
- This salad is best enjoyed chilled; you may refrigerate the watermelon and cucumber before assembling.
