Description

These refreshing Watermelon Popsicles are a fruity, layered frozen treat perfect for hot days. Featuring pureed watermelon, a smooth coconut milk layer, and a bright kiwi topping with a hint of sweetness, they combine natural flavors with a fun texture from mini chocolate chips. Ideal for summer snacking or a healthy dessert, these popsicles are easy to make and involve no cooking, just blending and freezing.


Ingredients

Watermelon Layer

  • 19 oz cubed seedless watermelon (about 3 1/2 cups)
  • 2 Tbsp granulated sugar
  • 1 Tbsp fresh lemon juice

Coconut Layer

  • 1/2 cup canned coconut milk (well shaken)
  • 1 1/2 Tbsp granulated sugar

Kiwi Layer

  • 13 oz kiwi (about 6 medium)
  • 2 Tbsp granulated sugar
  • Optional: a tiny bit of blue gel food coloring for enhancing green color

Additional

  • 1 1/2 Tbsp granulated sugar (divided in layers as above)
  • 1 Tbsp mini chocolate chips


Instructions

  1. Prepare Watermelon Puree: Add cubed watermelon, 2 tablespoons granulated sugar, and lemon juice to a blender. Blend until smooth and well pureed. Skim off any foam that forms on top.
  2. Fill Popsicle Molds with Watermelon Layer: Carefully pour the watermelon puree into 10 popsicle molds, filling each about two-thirds full. To avoid splashing on the sides, pour slowly down the outside edge of the mold, wiping off any residue with a damp paper towel or q-tip as needed.
  3. Add Chocolate Chips: Sprinkle mini chocolate chips evenly over the watermelon layer in the molds. Using the popsicle stick, gently push the chips down toward the sides for visibility once frozen. Clean the mold sides if necessary, then cover with lids and insert the sticks. Freeze for 3 1/2 hours.
  4. Prepare Coconut Milk Layer: During the last 30 minutes of the watermelon layer freezing, whisk coconut milk with 1 1/2 tablespoons sugar until sugar dissolves. Chill this mixture for 30 minutes to ensure a pourable, cool but not thick consistency. If too thick, thin with 1-2 tablespoons cold water.
  5. Pour Coconut Milk Layer: Remove the watermelon popsicles from the freezer and lids. Carefully pour about a scant tablespoon of the chilled coconut milk mixture evenly over each watermelon layer, pouring slowly down the sides to avoid disturbing the layer below. Clean mold sides as needed. Return popsicles to freezer uncovered and chill for 45 minutes.
  6. Prepare Kiwi Puree: Cut tops off kiwis and scoop out flesh, leaving skins intact. Blend kiwi flesh with 2 tablespoons granulated sugar until pureed. For a brighter green color, optionally add a tiny bit of blue gel food coloring. Push the puree through a fine mesh strainer into a bowl to remove seeds. Chill kiwi puree for 30 minutes.
  7. Add Kiwi Layer: Remove frozen popsicles from the freezer and carefully pour about 1 tablespoon of chilled kiwi puree on top of the coconut layer. Return to freezer and chill until fully solid, about 2 to 3 hours.
  8. Remove Popsicles from Molds: To unmold, turn the popsicle tray sideways and run the plastic molds under warm water for several seconds, avoiding the kiwi layer at the top to prevent melting. Slowly pull the popsicles out of the molds for serving.
