Description

A refreshing and vibrant Watermelon Salad with Feta and Cucumber, perfectly balanced with a sweet and tangy honey-lime dressing and aromatic fresh herbs. Ideal for hot days, this salad is quick to prepare, light, and packed with flavor.

Ingredients

Dressing

  • 2 tablespoons honey
  • 2 tablespoons lime juice
  • 1 to 2 tablespoons quality extra virgin olive oil
  • Pinch of salt

Salad

  • 1/2 watermelon, peeled and cut into cubes
  • 1 English or Hot House cucumber, cubed (about 2 cupfuls of cubed cucumbers)
  • 15 fresh mint leaves, chopped
  • 15 fresh basil leaves, chopped
  • 1/2 cup crumbled feta cheese (more to your liking)

Instructions

  1. Make the dressing: In a small bowl, whisk together the honey, lime juice, extra virgin olive oil, and a pinch of salt until fully combined. Set the dressing aside to let the flavors meld.
  2. Prepare the salad: In a large bowl or a serving platter with sides, combine the cubed watermelon, cubed cucumbers, and chopped fresh herbs (mint and basil). Mix gently to distribute the ingredients evenly.
  3. Finish and serve: Drizzle the prepared dressing over the watermelon salad, then toss gently to coat everything lightly with the dressing. Top the salad with crumbled feta cheese. Serve immediately for the freshest taste and texture.

Notes

  • Use ripe but firm watermelon and cucumbers to maintain texture.
  • Adjust the amount of olive oil according to your preference for richness.
  • Fresh herbs can be substituted or augmented with cilantro or dill for variation.
  • Feta cheese can be increased or decreased to taste or replaced with goat cheese for a different flavor profile.
  • This salad is best served immediately to avoid the watermelon releasing too much juice and softening the salad.
