- 2 thick slices of bread such as brioche, wheat or sourdough
Custard Mixture
- 1/4 cup Greek yogurt
- 1 large egg
- 2 tablespoons maple syrup, agave, honey, or melted chocolate, plus more for drizzling
- Pinch of cinnamon
Toppings
- Blueberries, strawberries, and/or raspberries, for topping
- Powdered sugar (optional), for serving
- Toasted oats (optional), for serving
- Dried coconut (optional), for serving
- Chocolate shavings (optional), for serving
Instructions
- Preheat Oven or Air Fryer: Preheat an oven to 400ºF or an air fryer to 375ºF to prepare for baking or air frying the toast.
- Prepare Custard Mixture: In a medium bowl, whisk together Greek yogurt, egg, maple syrup (or chosen sweetener), and a pinch of cinnamon until smooth and well combined.
- Create Bread Wells: Using your fingers or the back of a spoon, gently press the center of each slice of bread to create an indent or well without tearing the bread, allowing space for the custard mixture.
- Fill Bread with Custard: Divide the prepared custard mixture evenly between the two bread slices, filling the wells created in the previous step.
- Add Fruit Toppings: Top the custard-filled bread slices with your choice of fresh berries such as blueberries, strawberries, and/or raspberries.
- Cook Bread: For oven baking, place the bread slices on a baking sheet and bake for 10 to 13 minutes until the custard is set and the bread is golden brown. For air frying, carefully place the bread slices in the air fryer basket and cook for 7 to 10 minutes until set and golden.
- Finish and Serve: Transfer the cooked yogurt toasts to a plate, drizzle with additional maple syrup or selected topping, and optionally dust with powdered sugar or sprinkle toasted oats, dried coconut, or chocolate shavings before serving.
