Ingredients
Main Ingredients
- 2 lb zucchini (about 2 large or 5 medium)
- 1 1/2 tsp fine sea salt (divided)
- 2 large eggs (lightly beaten)
- 1/2 cup chopped green onions
- 3/4 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp ground black pepper
- Olive oil (for sautéing)
- Sour cream (to serve)
Instructions
- Prepare the zucchini: Wash zucchini and trim off ends. Grate zucchini using large holes of box grater or food processor attachment. Place grated zucchini in large bowl, stir in 1 tsp salt, and let sit for 10 minutes to draw out moisture.
- Remove excess moisture: After 10 minutes, tightly squeeze the zucchini over the sink to remove as much water as possible, optionally using cheesecloth for better wringing. You should have 3 1/2 to 4 cups of dry zucchini. Transfer to a clean large bowl.
- Mix wet ingredients: Add chopped green onions and the lightly beaten eggs to the zucchini and mix well.
- Combine dry ingredients: In a small bowl, whisk together flour, baking powder, remaining 1/2 tsp salt, and black pepper. Add this mixture to the zucchini bowl and stir until well combined into a batter-like consistency.
- Cook the fritters: Heat a large heavy-bottomed cast iron or non-stick skillet over medium heat and add 2 tablespoons of olive oil. When hot, spoon heaping tablespoons of the zucchini mixture into the pan and flatten slightly to form pancakes. Sauté each side for 3-5 minutes until golden brown and cooked through. Adjust heat if browning too fast and add more olive oil between batches as needed.
- Serve: Serve the fritters warm with a dollop of sour cream on top for a creamy, tangy contrast.
Notes
- Wringing the zucchini dry is essential to avoid soggy fritters and ensure crispiness.
- If you prefer gluten-free, you can substitute all-purpose flour with a gluten-free all-purpose blend.
- Use a heavy-bottomed skillet to help maintain even heat during cooking.
- Adjust seasoning to your taste by adding herbs like dill or parsley if desired.
- Serve immediately for best texture, as fritters can lose crispness when cooled.
