Description
A simple, flavorful Zucchini Rice recipe combining tender white rice with fresh shredded zucchini, garlic, and Parmesan cheese. This quick and easy dish is perfect as a light side or a wholesome vegetarian main, offering a delightful mix of textures and savory richness in just 25 minutes.
Ingredients
Main Ingredients
- 1 cup white rice (jasmine or other long grain rice)
- 1 1/2 cups water
- 1 garlic clove, pressed or grated
- 1 teaspoon kosher salt
- 1 cup shredded zucchini
- 2 tablespoons butter
- 1/2 cup freshly grated Parmesan cheese
- 1/2 teaspoon freshly ground black pepper
Instructions
- Rinse and cook the rice: Place 1 cup of white rice in a medium saucepan. Rinse the rice under cool water by swishing it with your fingers and draining it three times to remove excess starch. Add 1 1/2 cups water, 1 pressed garlic clove, and 1 teaspoon kosher salt to the saucepan. Bring to a boil over medium-high heat, then reduce the heat to low and cover with a lid. Let it cook gently for about 15 minutes, or until all the water has evaporated and the rice is tender. Once done, fluff the rice with a fork to separate the grains.
- Add zucchini and butter: Grate 1 cup of fresh zucchini. Immediately after cooking, stir the shredded zucchini into the hot rice along with 2 tablespoons of butter. Cover the pot again and let the rice and zucchini sit for 5 minutes, allowing the zucchini to soften and the butter to melt into the mixture.
- Finish with cheese and seasoning: After the resting period, stir in 1/2 cup of freshly grated Parmesan cheese and 1/2 teaspoon of freshly ground black pepper. Taste the dish and add more butter or salt if desired for enhanced flavor. Serve warm as a comforting side or a light main dish.
Notes
- Rinsing the rice removes excess starch and prevents it from becoming gummy.
- Using freshly grated Parmesan cheese greatly improves flavor and texture.
- You can substitute butter with olive oil for a dairy-free option.
- Adjust salt according to the saltiness of your cheese and personal preference.
- Try adding fresh herbs like parsley or basil for extra aroma and color.
