Chipotle Mayonnaise
- ½ cup mayonnaise
- ½ cup plain yogurt
- 2 chipotle chiles in adobo sauce, finely chopped
Wraps
- 2 large spinach tortillas
- ½ cup shredded lettuce, or to taste
- 1½ cups shredded Monterey Jack cheese
- 1 Haas avocado - peeled, pitted, and diced
- 4 slices cooked bacon, chopped
- 1 red onion, finely chopped
- 1 tomato, chopped
- 2 cooked chicken breasts, cut into chunks
Instructions
- Prepare Chipotle Mayonnaise: In a bowl, whisk together ½ cup mayonnaise, ½ cup plain yogurt, and 2 finely chopped chipotle chiles in adobo sauce until smooth and well combined. Set aside to allow flavors to meld.
- Warm Tortillas: Heat the 2 large spinach tortillas in the microwave for about 30 seconds until they are warm and pliable, making them easier to roll without cracking.
- Assemble the Wraps: Spread approximately 1 tablespoon of chipotle mayonnaise down the center of each warmed tortilla. Then layer evenly ½ of the shredded lettuce, Monterey Jack cheese, diced avocado, chopped bacon, finely chopped red onion, chopped tomato, and chunks of cooked chicken breast onto each tortilla.
- Roll the Wraps: Fold the opposing edges of each tortilla inward to overlap the filling, then roll one of the remaining edges tightly around the fillings to form a secure wrap.
- Optional Grilling: If desired, place the wraps in a panini maker and press for 1 to 2 minutes until grill marks appear and the cheese slightly melts, adding warmth and extra flavor.
