Description

California Club Chicken Wraps are a flavorful and satisfying meal featuring tender cooked chicken, fresh vegetables, creamy avocado, crispy bacon, and melty Monterey Jack cheese, all wrapped in warm spinach tortillas and dressed with a smoky chipotle mayonnaise. Perfect for a quick lunch or a light dinner, these wraps offer a delicious blend of textures and smoky, tangy flavors.


Ingredients

Chipotle Mayonnaise

  • ½ cup mayonnaise
  • ½ cup plain yogurt
  • 2 chipotle chiles in adobo sauce, finely chopped

Wraps

  • 2 large spinach tortillas
  • ½ cup shredded lettuce, or to taste
  • 1½ cups shredded Monterey Jack cheese
  • 1 Haas avocado - peeled, pitted, and diced
  • 4 slices cooked bacon, chopped
  • 1 red onion, finely chopped
  • 1 tomato, chopped
  • 2 cooked chicken breasts, cut into chunks


Instructions

  1. Prepare Chipotle Mayonnaise: In a bowl, whisk together ½ cup mayonnaise, ½ cup plain yogurt, and 2 finely chopped chipotle chiles in adobo sauce until smooth and well combined. Set aside to allow flavors to meld.
  2. Warm Tortillas: Heat the 2 large spinach tortillas in the microwave for about 30 seconds until they are warm and pliable, making them easier to roll without cracking.
  3. Assemble the Wraps: Spread approximately 1 tablespoon of chipotle mayonnaise down the center of each warmed tortilla. Then layer evenly ½ of the shredded lettuce, Monterey Jack cheese, diced avocado, chopped bacon, finely chopped red onion, chopped tomato, and chunks of cooked chicken breast onto each tortilla.
  4. Roll the Wraps: Fold the opposing edges of each tortilla inward to overlap the filling, then roll one of the remaining edges tightly around the fillings to form a secure wrap.
  5. Optional Grilling: If desired, place the wraps in a panini maker and press for 1 to 2 minutes until grill marks appear and the cheese slightly melts, adding warmth and extra flavor.

  • For a different flavor twist, substitute the chipotle mayonnaise with chipotle ranch by using ½ cup ranch dressing instead of mayonnaise.
