Ingredients

Fresh Produce

  • 2 garlic cloves
  • 2 peaches, peeled and diced
  • 1 cup cherries, halved and pitted
  • 1 large handful cilantro, stems discarded and finely chopped
  • 1 jalapeño pepper, chopped
  • 1/2 small red onion, finely chopped
  • Zest from 1 lime

  • Juice of 1 1/2 limes
  • Salt, to taste


Instructions

  1. Prepare the Fruits and Vegetables: Peel and dice the peaches, halve and pit the cherries. Finely chop the garlic cloves, jalapeño, red onion, and cilantro, and zest one lime.
  2. Mix Ingredients: In a medium-sized bowl, combine the diced peaches, halved cherries, chopped garlic, jalapeño, red onion, cilantro, and lime zest.
  3. Add Lime Juice and Seasoning: Squeeze the juice from 1 1/2 limes over the salsa mixture. Add salt to taste, and gently toss everything together to combine the flavors.
  4. Chill and Serve: Let the salsa chill in the refrigerator for at least 10 minutes before serving to allow the flavors to meld. Serve fresh with tortilla chips, grilled proteins, or as a topping for tacos.
