Ingredients
Salad
- 3 cups strawberries, chilled, tops cut off
- 3 cups watermelon, chilled, seedless if possible, cubed into 1 to 1 ½ inch pieces
- 2 tablespoons fresh mint, chiffonade or chopped fine
- ½ cup feta cheese, crumbled
- ½ teaspoon chia seeds
Dressing
- 2 tablespoons olive oil
- 1 whole fresh lime, juiced
- 1 ½ teaspoons honey or maple syrup (liquid type)
- Crushed sea salt flakes, to taste
- Black pepper, to taste
Instructions
- Prepare the dressing: In a mason jar or small bowl, combine olive oil, fresh lime juice, honey (or maple syrup), crushed sea salt flakes, and black pepper. Close the jar or whisk the ingredients together well until fully emulsified. Set aside to let the flavors meld.
- Trim and slice strawberries: Remove the tops of the chilled strawberries and slice each into 3 or 4 pieces depending on size.
- Cube the watermelon: Cut the chilled watermelon into 1 to 1 ½ inch cubes for easy eating and arrange them on a serving platter along with the strawberry slices.
- Assemble the salad: Gently stir in the chopped fresh mint, crumbled feta cheese, and chia seeds over the arranged fruit on the platter to evenly distribute the flavors.
- Dress and season: Drizzle the prepared honey lime dressing evenly over the salad. Add additional fresh lime juice if desired, and lightly sprinkle with more crushed sea salt flakes and fresh black pepper to taste.
- Serve immediately: Enjoy this refreshing salad right away to savor the crisp texture of the fruit combined with the creamy feta and zingy dressing.
Notes
- Use chilled fruit for the freshest and most refreshing salad experience.
- If you prefer a vegan version, substitute feta cheese with a plant-based cheese or omit it entirely.
- Maple syrup can be used as a substitute for honey for a vegan-friendly option.
- The chia seeds add a slight crunch and nutrition; you may omit them if desired.
- Adjust salt and pepper to your taste preference, but a light sprinkle enhances the sweetness and acidity of the salad.
